Cucumber Herb Cream Cheese (Printable Version)

Fresh cucumber and herbed cream cheese blend for a light, elegant tea-time treat.

# What You Need:

→ Herb Cream Cheese

01 - 8 oz cream cheese, softened
02 - 2 tbsp fresh chives, finely chopped
03 - 1 tbsp fresh dill, finely chopped
04 - 1 tbsp fresh parsley, finely chopped
05 - 1 tsp lemon juice
06 - 1/4 tsp garlic powder
07 - Salt and freshly ground black pepper, to taste

→ Sandwiches

08 - 1 English cucumber, thinly sliced
09 - 12 slices white sandwich bread, crusts removed
10 - 2 tbsp unsalted butter, softened

# How-To Steps:

01 - Combine the cream cheese, chives, dill, parsley, lemon juice, garlic powder, salt, and pepper in a mixing bowl. Mix until smooth and well blended.
02 - Lay out the bread slices on a clean work surface. Lightly spread a thin layer of softened butter on each slice to prevent sogginess.
03 - Evenly spread the prepared herb cream cheese mixture onto each slice of bread, ensuring complete coverage to the edges.
04 - Arrange thinly sliced cucumber over half of the bread slices, slightly overlapping the slices for even coverage.
05 - Top with the remaining bread slices, cream cheese side down, to form complete sandwiches. Gently press each sandwich to secure layers.
06 - Trim the crusts if not already removed. Cut each sandwich into quarters, either rectangles or triangles, for elegant finger-sized portions.

# Helpful Tips:

01 -
  • These come together in fifteen minutes flat but taste like you spent hours preparing something special
  • The herb cream cheese keeps perfectly in the fridge, so you can prep it days ahead and assemble whenever company calls
02 -
  • Never assemble these more than two hours before serving because even with the butter trick, they will eventually get soggy
  • Removing the crusts after assembly rather than before gives you neater edges and prevents the bread from drying out
03 -
  • Use a mandoline or very sharp knife to slice the cucumber as thin as paper, which makes these sandwiches elegant and easy to bite
  • Pat the cucumber slices dry with paper towels before assembling to prevent any excess moisture from making the bread soggy
