01 - In a large mixing bowl, combine sweetened shredded coconut, powdered sugar, sweetened condensed milk, vanilla extract, and salt. Stir until a sticky, uniform mixture forms.
02 - Using clean hands or a small cookie scoop, roll about 1 tablespoon of the mixture into a ball. Repeat until all of the mixture is used.
03 - Place the unsweetened shredded coconut (and additional powdered sugar, if using) in a shallow dish. Roll each coconut ball in the coating until evenly covered.
04 - Arrange the coconut tails on a parchment-lined tray. Chill in the refrigerator for at least 30 minutes before serving for best texture.
