Tender roast beef and cheese rolled in crisp tortillas with caramelized onions and a warm dipping broth.

# What You Need:

→ Roll Ups Components

01 - 4 large flour tortillas (10-inch diameter)
02 - 8 oz thinly sliced roast beef
03 - 4 slices provolone cheese
04 - 1 medium onion, thinly sliced
05 - 1 tbsp unsalted butter
06 - 1 tbsp olive oil
07 - 1/2 tsp garlic powder
08 - 1/2 tsp dried thyme
09 - Salt and freshly ground black pepper to taste

→ Au Jus

10 - 2 cups low-sodium beef broth
11 - 1 tbsp Worcestershire sauce
12 - 1 tsp soy sauce
13 - 1/2 tsp onion powder
14 - 1/2 tsp garlic powder

# How-To Steps:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper to prevent sticking during baking.
02 - Melt butter with olive oil in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, until golden and caramelized, about 8-10 minutes. Season with salt, pepper, garlic powder, and thyme.
03 - Lay tortillas flat on a clean surface. On each tortilla, layer sliced roast beef, caramelized onions, and one slice of provolone cheese, distributing evenly.
04 - Tightly roll up each tortilla and place seam-side down on the prepared baking sheet. Optionally, brush tops lightly with olive oil for enhanced crispness.
05 - Bake for 10-12 minutes until tortillas are golden and crisp, and cheese has fully melted. Monitor closely to prevent over-browning.
06 - While roll ups bake, combine beef broth, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Bring to a simmer over medium heat and cook for 5-7 minutes to meld flavors. Adjust seasoning as needed.
07 - Remove roll ups from oven and allow to cool slightly. Slice each roll in half diagonally if desired. Serve immediately with warm au jus for dipping.

# Helpful Tips:

01 -
  • Everything you love about a French dip sandwich but ready in half the time
  • The tortilla gets perfectly crisp while staying tender enough to bite through
  • The au jus takes five minutes but makes the whole dish feel restaurant special
02 -
  • Cold tortillas crack when you roll them so let them sit on the counter for 15 minutes before starting
  • Do not skip brushing the tops with olive oil because that is what creates the satisfying crunch
  • The au jus can be made ahead and reheated but the roll ups are best straight from the oven
03 -
  • After rolling place the seam side down and let them rest for 5 minutes before baking to help them hold their shape
  • If your tortillas start cracking when rolling wrap the whole stack in a damp paper towel and microwave for 20 seconds
