01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Lay corned beef slices on a clean surface. Place one slice of Swiss cheese on each piece.
03 - Spread approximately 2 teaspoons of drained sauerkraut along the center of each slice.
04 - Drizzle a small amount of sugar-free dressing over sauerkraut. Sprinkle with caraway seeds and black pepper if desired.
05 - Roll each slice tightly starting from one end. Place seam-side down on prepared baking sheet.
06 - Brush melted butter over the tops of each roll up using a pastry brush.
07 - Bake for 12 to 15 minutes until cheese is melted and roll ups are golden brown with slight crispiness.
08 - Let cool for 2 minutes before serving. Serve with extra dressing for dipping.
