Seasoned beef and broccoli in a cheesy skillet, ready in 30 minutes for an easy low-carb dinner.

# What You Need:

→ Meat

01 - 1 lb ground beef (80/20 blend preferred)

→ Vegetables

02 - 4 cups broccoli florets, fresh or frozen
03 - 1 small onion, diced
04 - 2 cloves garlic, minced

→ Dairy

05 - 1 cup shredded cheddar cheese
06 - 2 tbsp cream cheese

→ Oils & Fats

07 - 2 tbsp olive oil or avocado oil

→ Seasoning

08 - 1 tsp salt
09 - 1/2 tsp black pepper
10 - 1/2 tsp smoked paprika
11 - 1/2 tsp dried oregano
12 - 1/4 tsp crushed red pepper flakes

# How-To Steps:

01 - Heat 1 tablespoon oil in a large skillet over medium-high heat. Add diced onion and sauté 2 minutes until translucent.
02 - Add ground beef and cook, breaking up with spatula, until browned and cooked through, about 5–7 minutes. Drain excess fat if needed.
03 - Stir in garlic, salt, black pepper, smoked paprika, oregano, and red pepper flakes. Cook 1 minute until fragrant.
04 - Push beef mixture to one side. Add remaining tablespoon oil and broccoli florets. Sauté 2–3 minutes, then stir everything together.
05 - Add 2–3 tablespoons water, cover, and steam broccoli 3–4 minutes until just tender.
06 - Reduce heat to low. Stir in cream cheese until melted and well combined.
07 - Sprinkle shredded cheddar cheese evenly over skillet. Cover and let sit 2–3 minutes until cheese is melted.
08 - Serve hot, garnished with extra red pepper flakes or fresh herbs if desired.

# Helpful Tips:

01 -
  • Everything cooks in one pan so cleanup is literally just washing a single skillet
  • The cream cheese creates this velvety sauce that makes keto feel like a total treat
  • It comes together in under 30 minutes but tastes like it simmered all afternoon
02 -
  • Dont skip the water step because it creates steam that cooks the broccoli perfectly without making it mushy
  • Adding the garlic toward the end prevents it from burning which would make the whole taste bitter
  • The cream cheese needs to be fully melted and incorporated before adding the cheddar or you'll get weird pockets
03 -
  • Letting the skillet rest covered after adding cheese helps it melt evenly instead of just sitting on top
  • If you're meal prepping this, undercook the broccoli slightly so it doesn't become mushy when reheated
