# What You Need:

# How-To Steps:

01 - Combine cottage cheese, protein powder, lemon zest, lemon juice, honey or maple syrup, vanilla extract, and salt in a food processor. Blend until completely smooth and creamy, scraping down the sides as needed.
02 - Add rolled oats to the food processor and pulse several times until well combined. The mixture should begin to hold together when pressed, but avoid over-processing to maintain some texture.
03 - Transfer the mixture to a mixing bowl. Gently fold in the fresh blueberries using a spatula, taking care not to crush them. The berries should remain whole for bursts of sweetness in each bite.
04 - Place the bowl in the refrigerator for 10 minutes to firm up slightly. This makes shaping the bites much easier and prevents the mixture from sticking to your hands.
05 - Lightly dampen your hands with water. Scoop about 1 tablespoon of the mixture at a time and roll into bite-sized balls. You should get approximately 16 equal-sized bites.
06 - If using shredded coconut, pour it into a shallow bowl. Roll each formed bite in the coconut, pressing gently to adhere the coating evenly around the surface.
07 - Transfer the finished protein bites to an airtight container. Store in the refrigerator for up to 4 days, or freeze for up to 1 month. Thaw frozen bites in the refrigerator before enjoying.
