Lemon Blueberry Lasagna (Printable Version)

No-bake lemon and blueberry layers on a buttery vanilla-wafers crust, chilled until firm for neat slices.

# What You Need:

→ Crust

01 - 7 ounces (about 50 pieces) vanilla wafer cookies or graham crackers, finely crushed
02 - 6 tablespoons unsalted butter, melted

→ Lemon Cream Layer

03 - 8 ounces cream cheese, softened
04 - 1 2/3 cups powdered sugar
05 - 2 tablespoons fresh lemon juice
06 - 1 teaspoon lemon zest
07 - 1 cup heavy whipping cream, cold

→ Blueberry Layer

08 - 2 2/3 cups fresh or frozen blueberries
09 - 1/4 cup granulated sugar
10 - 2 tablespoons lemon juice
11 - 1 tablespoon cornstarch, mixed with 2 tablespoons water

→ Topping

12 - 1 cup heavy whipping cream, cold
13 - 3 tablespoons powdered sugar
14 - 1 teaspoon vanilla extract
15 - Zest of 1 lemon
16 - Fresh blueberries, for garnish (optional)

# How-To Steps:

01 - Combine crushed vanilla wafers and melted butter in a mixing bowl until the mixture resembles wet sand. Press firmly into the base of a 9x13-inch baking dish to form an even layer. Freeze while preparing the next components.
02 - In a separate bowl, beat softened cream cheese until completely smooth and creamy. Incorporate powdered sugar, lemon juice, and zest, mixing well. In another bowl, whip the cold heavy cream to stiff peaks, then delicately fold into the cream cheese mixture. Evenly spread the lemon cream layer onto the chilled crust.
03 - Combine blueberries, granulated sugar, and lemon juice in a saucepan over medium heat. Cook, stirring occasionally, until berries begin to release their juices, roughly 4–5 minutes. Stir in the cornstarch slurry, continue cooking until thickened, about 2–3 minutes. Transfer to a bowl and cool completely before layering over the lemon cream.
04 - Using an electric mixer or whisk, beat whipping cream, powdered sugar, and vanilla extract to stiff peaks. Spread evenly over the cooled blueberry layer. Garnish with lemon zest and fresh blueberries, if desired.
05 - Refrigerate for a minimum of 4 hours, ideally overnight, to set all layers. Slice into portions and serve chilled for optimal presentation.

# Helpful Tips:

01 -
  • It comes together without baking, saving you from a hot kitchen.
  • The combo of tart lemon and juicy berries is a game changer at any gathering.
02 -
  • If your layers are even a little bit warm, everything will slide—give each plenty of chill time.
  • Folding the whipped cream gently into the lemon mix is not optional unless you like dense, sad layers.
03 -
  • Don’t skip properly cooling the blueberry layer – any warmth will ruin your layers.
  • A zester or microplane makes gathering lemon zest fast and safe for fingers.
