Bite-sized sandwiches with assorted fillings—cheddar, cucumber, tomato and herbs—ideal for parties and snacks.

# What You Need:

→ Bread

01 - 8 slices sandwich bread (white, whole wheat, or a combination)

→ Fillings

02 - 2 tablespoons mayonnaise
03 - 2 tablespoons cream cheese, softened
04 - 3 ounces sliced cheddar cheese
05 - 3 ounces sliced ham or turkey (optional, omit for vegetarian)
06 - 1 small cucumber, thinly sliced
07 - 1 small tomato, thinly sliced
08 - 4 lettuce leaves, washed and dried
09 - Salt and black pepper, to taste

→ Garnish

10 - Finely chopped chives, dill, or parsley (optional)
11 - Small pickles or olives (optional)

# How-To Steps:

01 - Arrange the bread slices evenly on a clean cutting board.
02 - Using a spreading knife or small spatula, evenly coat each slice with mayonnaise or cream cheese.
03 - On half the bread slices, place cheddar cheese and ham or turkey if using. On the remaining slices, layer cucumber, tomato, and lettuce. Season all fillings lightly with salt and black pepper.
04 - Top each prepared slice with the remaining bread to enclose the fillings.
05 - Gently press each sandwich to secure, then trim crusts if desired. Cut each sandwich into quarters, forming mini sandwiches.
06 - Arrange the mini sandwiches on a serving platter. Garnish with fresh herbs, small pickles, or olives if desired. Serve immediately or cover with a damp paper towel and refrigerate until serving.

# Helpful Tips:

01 -
  • You can customize every single sandwich, so no one is left picking out cucumbers (unless they want to).
  • These are effortless to put together, and they're always the first to disappear at a gathering.
02 -
  • Once, I forgot to blot the cucumber slices dry and ended up with soggy bread—towel-drying is a must.
  • Letting the cream cheese sit out for 10 minutes makes it much easier to spread and keeps the bread from tearing.
03 -
  • If your bread tears easily, pop it in the freezer for a few minutes to firm up before spreading.
  • Keep garnishes simple—too much on top makes stacking tricky and messy.
