05 - Pour dressing over salad and toss gently to coat all ingredients evenly. Sprinkle grated Parmesan over the top and toss lightly once more.
06 - Serve immediately at room temperature or refrigerate for up to 2 hours to allow flavors to meld together.

# Helpful Tips:

01 -
  • It gets better as it sits so you can make it hours before guests arrive and actually relax before they show up
  • The combination of cold tender pasta with burst tomatoes and creamy mozzarella hits every texture craving at once
02 -
  • Never skip rinsing the pasta under cold water or the tortellini will keep cooking and become gummy while you prep everything else
  • The salad needs at least 15 minutes in the refrigerator after tossing so the dressing can penetrate the pasta properly
03 -
  • Reserve a handful of grated Parmesan to sprinkle on top right before serving so it stays bright and doesn't disappear into the salad
  • If making this for a crowd don't toss it until you arrive at your destination so the vegetables stay crisp and vibrant
